1.5 lb extra lean ground beef
2 large eggs
1 onion, finely chopped
1/2 cup chopped fresh parsley
1 tsp dried basil
ground black pepper to taste
1/4 tsp salt
2 tsp extra virgin olive oil
1 cup dry red wine or reduced sodium beef broth
1/4 cup low sodium tomato paste
2 cups reduced sodium beef broth
2 tsp granular sugar substitute
Directions
COMBINE beef, eggs, onion, parsley, basil pepper, and salt in large bowl. Mix well with hands for wooden spoon. form into 36 meatballs.
HEAT oil in large nonstick skillet over medium high heat. Add meatballs and brown all over, 5 to 7 minutes. Remove to plate and pour off fat from skillet. Return meatballs to skillet and reduce heat to low.
WHISK wine and tomato paste in small bowl. Pour over meatballs. Simmer over low heat, stirring occasionally, until tomato mixture thickens, 10 minutes. Add broth and continue to simmer about 30 minutes. Stir in sugar substitute. Serve warm or at room temperature. Garnish with additional parsley.
