- 3 C chopped ripe mangoes (about 3 to 4 mangoes)
- 1/2 C chopped yellow onion
- 1/4 C raisins
- 4 tbsp brown sugar
- 1 tbsp finely chopped or grated fresh ginger
- 1 tsp finely chopped fresh serrano or jalapeno chile peppers, stems and seeds removed (wear plastic gloves when handling)
- 1 1/4 tsp minced garlic
- 1 tsp garam masala (indian spice mixture)
- 4 tbsp apple cider vinegar
- 1 tsp finely grated lemon peel
- 2 tbsp lemon juice
- 1 tbsp finely grated orange peel
- 1/2 C orange juice
Directions

Combine the mangoes, onion, raisins, sugar, ginger, peppers, garlic, garam masala, vinegar, lemon peel, lemon juice, orange peel, and orange juice in a saucepan, and bring to a simmer. Simmer for 10 to 12 minutes, or until the ingredients are soft.

Strain the liquid from the solids, reserving the solids in a bowl. Pour the liquid back into the saucepan, and reduce it to a syrup by cooking over high heat, stirring constantly for about 6 minutes.

Fold the syrup into the solids, and allow it to cool to room temperature. Store in an airtight container in the refrigerator for up to 1 month.
Serve this spicy, antioxidant-rich condiment with roasted meats and poultry
