- 1 cup dairy free margarine
- 1/2 cup confectioners' sugar
- 1 1/2 tsp vanilla extract
- 2 1/4 cups unbleached all purpose flour
- 1/8 tsp salt
- 1 cup confectioners' sugar for rolling
Directions
- Preheat oven to 400°F and line 2 baking sheets with parchment paper.
- In a bowl of a stand mixer fitted with the paddle attachment, combine the margarine, 1/2 cup sugar, and the vanilla extract until thoroughly combined. Stir in the flour and salt until the dough comes together into a pliable ball.
- Shape the dough into 1 inch balls, and place them onto the prepared baking sheets.
- Bake for 10 to 12 minutes, or until lightly browned.
- While the cookes are still warm but cool enough to hanle, roll them in the remaining sugar.
- Cool completely, and roll in sugar again.
