- 2 tsp olive oil
- 4 4oz boneless cener cut loin pork chops
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cloves garlic, minced
- 1/4 cup white wine
- 2 Tbls lemon juice
- 1 tsp grated lemon rind
- 2 Tbls fresh chopped parsely
- 1 Tbls capers, drained
Directions
Heat oil in a large nonstick skillet over medium high heat. Sprinkle park with salt and pepper. Add pork to pan, cook 4 to 5 minutes on each side or until done. Remove from pan and keep warm.
Add garlic to pan, cook 30 seconds, add Wine, stirring constantly to loosen browned bits from bottom of pan. Stir in lemon juice. Return pork to pan an sprinkle with lemon rind, parsley and capper. Serve immediately.
