Salmon and Garlic Bread Salad

- 2 slices day old light whole wheat bread
- 1 clove garlic, cut in half
- 1 can (7 1/2 oz) salmon, drained and flaked
- 1/2 cup chopped scallions green part only
- 1 cup cherry tomatoes, halved
- 1 tsp olive oil
- 5 tsp white wine vinegar
- 1 Tbsp tomato juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp minced fresh basil
Directions
Preheat oven broiler. Set rack 3 to 4 inch from heat. Rub one side of each bread slice with garlic and set garlic side up on broiler rack. Broil for 20 to 30 seconds or until lightly browned.
When bread is cool cut into 1 inch pieces.
Combine salmon, scallions and tomatoes in large serving bowl.
Combine oil, vinegar, tomatoe juice, salt and pepper in a cup and pour over salmon mixture. Add garlic bread pieces and basil and toss.
